PDC Birthday: Manure cake! or is it??
One of our PDC students had her birthday with us yesterday. In the morning we heard all sorts of requests for her birthday cake: a compost cake, a manure cake, a kale cake, even a humanure cake! So we did some creative baking and decorating and came up with a Gluten Free Vegan Chocolate Mud cake, decorated with kale and with a big lump of poo-looking chocolate on top!
I used 4 cups of GF flour mix (in this case the mix was Brown Rice Flour, Buckwheat Flour and Sorghum Flour), 1 1/3 cup of Rapadura Sugar, 1 1/2Tbs Aluminium Free & Gluten Free baking powder, 2 Tbs Cacao, 2 handfuls of each dark and white chocolate chips. I mixed that thoroughly then added water to make a sticky but not dry dough. I melted 1 1/2 bars of dark cooking chocolate on a double boiler and added that to the dough. This was put into a large baking tin and put into the oven at 180° Celsius for around 1/2 hour, until the middle was firm and springy.
We let the cake cool. I left the decorating to Brad, our long term volunteer, who melted another 1 1/2 bars of cooking chocolate. Some of the melted chocolate was spread over the whole cake, and enough was left over to create a large chocolate “poo” mound in the middle. Kale leaves were put on the corners of the cake and a candle sat in the middle. Voila, the chocolate “manure” cake!
