Cheese cake
This cheesecake I made with fresh homemade cheese and fresh cream. The crust is made of nuts and dried fruit (grain free) and the cake requires no baking! I used a homemade cheese for this cake, the cheese takes around 3 days to make. Normally I salt the cheese, but as I wanted to use it for cheesecake I left the salt out when pressing it (cheese making recipe to follow on this blog). If you do not make your own soft cheese, you can just buy a soft cheese like philadelpia.
For the base:
Put a few handfuls of dates, pecans and desiccated coconut into a blender. Add 1/2 stick of melted butter (125 grams). Blend this mix until smooth, you may have to push the mix down to draw. When combined, press the mix into a round pie dish, making sure to even it out on the bottom and push the mix up the sides. Place this in the refrigerator.
For the filling:
Fill the blender half to three quarter with soft cheese, then add 3 Tbs thick cream and a cup of coconut sugar. Squeeze a lime and add the juice to the contents of the blender. Blend this until smooth.
In the mean time, bring around 4 handfuls of mixed berries to a boil in a little water (a bit more berries if you want a more “berry” taste). Once boiling, turn off the heat and stir in some gelatin or agar agar (follow directions on the packet). Leave to stand.
Boil a kettle with a little water as well, pour 1/2 cup of boiling water into a cup and add more gelatin or agar agar to this whilst stirring vigorously. Once there are no obvious gelatin/agar agar traces anymore, pour the gel mixture into the cheese mixture and stir (don’t blend!) until smooth and combined.
Pour the cheese mixture into the set base until 1/2 centimeter away from the top. Get the berry mixture and spoon it in. You can make swirls or other pattern if you like. Do this until the filling almost reaches the top.
Put the cake into the fridge and leave to set for around 12 – 24 hours. I usually make this cake the day before I want it!
When serving, add some fresh thick cream and enjoy!
