Them Bones

Hearty beef and veg soup, a winter treasure!

Soup bones are a wonderful and cheap way to make a wholesome winter meal. Our soup bones are from our own cows, but I believe they are not that expensive at the butcher’s. I added some chopped up beef to this recipe as well, to further “beef up” the soup, as it were…

 

Ingredients:
3 or 4 chunky soup bones
500 grams of chopped beef
1 cup of quinoa grain (can also use barley if you can have gluten)
1 cup green lentils
1 cup red split lentils
1/2kg carrots
3 or 4 celery stalks
whatever greens available from the garden, include some herbs like basil if it is in season where you are
1 – 2 Tbs sea salt (to taste)
1/2 – 1 whole chilli (again, to taste)

Add all the ingredients into a large pot and fill with water until about 5cm above the ingredients. Put on stove and bring to a boil. Simmer as long as possible, I make our soup in the morning and leave it on our wood stove for the whole day. Enjoy with some gluten free sour dough bread and homemade raw butter!
