Vegan chocolate biscuits

We had some vegan volunteers staying with us, so I decided to make some vegan chocolate biscuits. I still had some flour left over (spelt flour), but you can make this with gluten free flour as well (the best gluten free flour I found is equal part buckwheat, quinoa and rice).

Ingredients:
3 cups of your favorite flour
1 cup sugar (eg rapadura or coconut sugar (low fodmaps, use coconut sugar!))
3/4 – 1 cup of liquid coconut oil or 250gr melted butter
2 Tbs cacao powder
1 Tbs baking powder
1 1/2 tsp cinnamon
2 handfuls chopped raw macadamias

Mix all dry ingredients together, then add the coconut oil. Mix thoroughly. Drop a tablespoon full on a greased oven tray. Give the cookies about 2cm space all around. Repeat procedure until tray is full. Bake in oven at 160C for about 10 – 15 minutes. Take out when cookies are getting dark brown on the sides. Let cool on the tray, then use an egg flipper to move them to a cooling rack. They may be a little crumbly, but very more-ish according to our vegan taste testers!
