Steamed vegetable bolognese

Rather than boring old pasta, I serve steamed vegetables with a bolognese sauce, making the dish gluten free, paleo and primal, with scd and low fodmap options….

In a pot put mince, onion or green spring onion (for low fodmap), green beans, carrots and celery if desired. Add chopped whole tomatoes and a small amount of water (scd) or a bottle of passata if you are able to have it. Passata is strained tomatoes, less strong than tomato paste and it provides a lovely base for tomato based dishes.
Add some garlic or garlic infused olive oil (for low fodmap) and salt and pepper to taste and bring to a boil. Simmer for at least 20 – 30 minutes, stirring and making sure the mince is broken up into smaller pieces. Alternatively put into a thermal cooker after breaking up the mince.

In a vegetable steamer steam some carrots, green beans, sweet potato (no sweet potato for scd) and pumpkin/squash (low fodmap people who have trouble with pumpkin/squash, replace with zucchini (courgette)). Steam vegetables until soft. Serve vegetables with the bolognese sauce and a salad with dressing or some garlic infused oil and apple cider vinegar. You can serve it with some homemade soft cheese if desired.
