Gluten Free Chocolate Hazelnut muffins

A dozen gluten free hazelnut muffins

This is the favourite recipe of our long term volunteers here at the Permaculture Research Institute Sunshine Coast. It is Gluten Free and uses no flour at all, and is a veritable taste sensation!

Add 3 1/2 cups of hazelnut meal, 1 Tbs baking powder and 1 1/2 Tbs cacao powder to a bowl and mix. In a blender blend 7 eggs and 3/4 cup rapadura sugar. In a double boiler melt a bar of your yummiest dark chocolate (optional). Mix the dry ingredients and the blended egg mixture, then add the optional melted chocolate if you so choose. Stir well.

Grease a 12 piece muffin tray well (I found coconut oil to work best to prevent sticking). Add a big spoonful of mix to the tray, filling each hole (don’t overfill). Bake in the oven on 160C until firm to touch. Best eaten warm, but will be eaten in any state….
